Teenager Approved Breakfast Burrito

I have a male teenager at home. He eats around the clock. Call me old fashioned, but I refuse to throw him a "boxed breakfast pastry" in the morning before school. I cook him something every school day. These super easy breakfast burritos are quick to throw together and very filling. Also, if you have more than ONE teen to feed in morning, you can have several options ready for stuffing them!

Not everyone is as "vanilla" as my boy - just eggs/bacon/cheese for him!

What you'll need to make one large burrito (double for 2):

  • Two large eggs
  • 3 slices cooked bacon
  • 1/4 cup shredded cheese (taco style or medium cheddar - or whatever kind you like)
  • Large burrito shell
  • Salt & Pepper to taste
What you'll do:
  • Crack and gently scramble eggs in a medium bowl
  • Preheat pan
  • Scramble eggs over medium high heat. While cooking, add in crumbled bacon.
  • Continue to scramble until just set. Remove eggs from heat.
  • Microwave burrito shell for 10 seconds or until warm and flexible.
  • Place egg mixture down center of shell. Top with shredded cheese.
  • Fold in sides and then roll the burrito up from the bottom.
You can also chop onion, green pepper, ham.... cook that a tad before adding egg. My son also likes crumbled sausage.
