Cheeseburger Soup
Cheeseburger Soup is an amazing thing. The name is misleading. I guess that is the name since it has hamburger and cheese in it... You can also use cubed up sirloin or round steak - heck even wild game if that suits your fancy! Try it - you'll watch it quickly become a family favorite!
What you’ll need:
- 1 lb ground beef
- 3/4 c chopped onion
- 3/4 c shredded carrots
- 3/4 c diced celery
- 1 tsp dried basil
- 1 tsp dried parsley
- 4 tbsp butter, divided
- 3 c chicken broth
- 4 c peeled and diced potatoes
- 1/4 c AP flour
- 16 oz cubed Velveeta
- 1-1/2 c milk
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/4 c sour cream
What you’ll do:
In a 4 qt sauce pan, brown ground beef. Drain and remove from pan and set aside.
In same pan, melt 1 T butter. Add in onion, carrot and celery. Sauté until soft, 6 minutes or so.
Add broth, potatoes and cooked beef.
Bring to a boil. Reduce heat and cook 12 minutes.
In a small skillet, melt remaining 3T butter. Add flour and stir continuously stirring for 3-5 minutes.
Add flour mixture to soup and bring to boil. Cook and stir 3 minutes.
Stir in cubed cheese, salt, pepper, basil and parsley. Cook, stirring constantly until Cheese has melted.
Blend in sour cream.
Serve and enjoy!
