Southern Style Green Beans with Bacon, Potatoes, and Onions

One of the best things about "harvest season" is the amazing fresh vegetables we are able to use! My copious quantities of all things vegetative has led me to LOTS of cooking! Green Beans with Bacon, Potatoes, and Onion is a real treat. So good I dare say it can stand on its own as a main dish!

What you'll need:

  • 1 lb fresh green beans, snapped and ends removed
  • 6 strips (or more) thick cut bacon, cut into 1 inch pieces
  • 6 small potatoes, diced
  • 1 sweet onion
  • 1 clove garlic, minced
  • 3-4 cups chicken stock
  • Salt
  • Pepper
What you'll do:
  • Clean, trim and snap beans. Set aside.
  • Cook the chopped bacon over medium high heat in a large skillet.
  • While bacon cooks, chop onion, dice potatoes, and mince the garlic.
  • When bacon is crisp, remove from pan to a paper towel lined plate. 
  • Pour off all but about 2 tbs of the bacon fat. Return pan to heat and saute onions until translucent. 
  • Add garlic to onion, saute 2 minutes more.
  • Add beans, potatoes & bacon back to pan. 
  • Season with salt & pepper (to taste).
  • Add enough chicken stock to cover the mixture (about 3-4 cups).
  • Simmer covered for 15-20 minutes or until the potatoes are tender.
I love to serve this with fresh Parmesan grated over the top. To brighten it up, I also threw on a couple roasted CHERRY TOMATOES!
