Roasted Cherry Tomatoes with Olive Oil and Garlic
WOW - I really need to chill out on the Farmers Markets..... Ha!
Due to my obsession, I've found a new way to use Cherry Tomatoes! Super simple and they're delicious! The flavor is very intense. Toss them with pasta and a cream sauce, or throw them on a salad - either way you'll be surprised how good they are!

What you'll need:
- 1 lb cherry tomatoes
- 5 cloves garlic peeled
- 3 tbsp olive oil
- Salt
- Pepper
What you'll do:
- Preheat the oven to 250 degrees F.
- Slice cherry tomatoes and scatter on a large baking sheet or jelly roll pan.
- Toss them with olive oil, salt, pepper and garlic.
- Roast them for 2 hrs 45 minutes.
These things are simply amazing!
