Eggs over Avocado

Who doesn't love a delicious egg, cooked perfectly over easy?

Salty and yummy with the golden yoke turning everything it touches into a glorious song for your taste buds.....OK maybe it's not that spectacular but it is delicious!

Now, an avocado alone.... meh....
An avocado turned into guacamole... now we're getting somewhere...

In this recipe, the runny egg yolk teams up with avocado and the result is a decadent and luscious breakfast!

It also helps that it takes maybe 4 MINUTES TO PREPARE!

What you'll need:
  • Half of an avocado sliced
  • Two eggs
  • 1 tbsp butter
  • Salt
  • Pepper
  • Turmeric 

What you'll do:
  • Prepare your nonstick skillet, heating over medium high heat. Add the butter and melt.
  • Carefully crack your eggs in the pan, and season with salt, pepper, and turmeric.
  • Cook until the whites are almost set, and flip GENTLY (its OK if a little yolk escapes).
  • Season again and cook for about 30 seconds.**


  • Serve the eggs over the avocado. This breakfast is my GO TO for a quick, satisfying, and protein filled breakfast. ENJOY!
